White Chili
1 lb ground turkey OR shredded, cooked chicken
1 medium onion diced
1 tbsp minced garlic
1 can great northern white beans, rinsed and drained
1 can (14.5 oz) low-sodium chicken broth
1 (4oz) can chopped green chilies
1 tsp ground cumin
1 tsp salt
1 tsp dried oregano leaves
a few twists of pepper grinder (or 1/2 tsp)
1 cup sour cream
1/2 cup heavy cream
a few pinches of corn starch, to help thicken if needed
Directions:
Season and cook ground turkey, drain and set aside. (If using chicken, cook it up however you like it, then shred it and set it aside.) Saute onion and garlic in butter or EVOO until
tender. Add turkey or chicken back in. Add beans, broth, chilies, and seasonings.
Bring to a boil then
reduce heat and let simmer about 20 mins uncovered. Remove from heat and
stir in sour cream and cream. (Mix in corn starch if its too "soupy".) Serve immediately.
