Strawberry Summer Salad

This is Ryan's very favorite dressing and my favorite salad to serve in the summer. Lucky for you, I'm going to share it. ;)

Strawberry Summer Salad

Dressing:
1 c vegetable oil
3/4 c sugar
1/2 c red wine vinegar
2 cloves finely minced garlic
1/2 tsp salt
1/2 tsp smoked paprika
1/4 tsp pepper

Salad:
1 pint sliced strawberries
1 c shredded mozzarella
1/2 c sliced, toasted almonds
lettuce (you can determine how much lettuce is enough)

Mix dressing ingredients (I have a plastic dressing mixer, pictured below) and shake until combined. I make this at least 2 hours before so the sugar completely dissolves. Refrigerate until ready to use and then obviously shake well right before using.

Slice strawberries and place in a paper towel lined colander and allow to sweat. Meanwhile, roughly chop lettuce and toast almonds. Mix lettuce, strawberries, almonds and mozzarella. Top with dressing right before serving!

This is what the dressing should look like. As you'll see, we are running low. Hey, if this gets my carnivore hubby to scarf down salad, I'll keep making it!
